Located in the heart of Melbourne, Florida’s vibrant downtown district, Hotel Melby is within walking distance to entertainment, art galleries, and boutique shops; and a short drive to the beach.
Chef CJ Szucs, a Florida Culinary Institute graduate, began his professional career in New York at the Westchester Country Club as an ACF apprentice, setting a firm foundation in the culinary field. After nearly five years in NY he returned to his home state of Florida and joined the renowned Sidebern’s, the sister restaurant to world famous Bern’s Steakhouse, working with James Beard Foundation semi-finalist Chef Chad Johnson; blending modern Mediterranean and classic French influences to create unique North American favorites. Furthering his career he moved to the Nation’s Capital to collaborate and create Italian inspired modern fare for a Top Chef television personality at Graffiato in the heart of downtown Washington, DC. Several years later, Scottsdale, Arizona became home where he joined Fox Restaurant Concepts, opening their newest dining experiences, The Yard and Little Cleo’s. While out West, Prime Steak Concepts recruited Chef CJ to develop and open Steak 44, an innovative fine dining experience, redefining the classic American Steakhouse. As the Lead Research and Development Chef, CJ was challenged to create innovative menus and recipes for the Prime Steak Concept brands including their flagship restaurant, Dominick’s Steakhouse. In 2017, Chef joined the Savannah culinary scene, playing a critical role in the opening of Prohibition Savannah under the direction of acclaimed Chef Greg Garrison. The culinary team developed an adventurous menu, adding a sophisticated spin on traditional Southern classics. In 2019, CJ joined the Westin Savannah Harbor Resort & Spa as the Chef de Cuisine, developing new menu programs showcasing the Lowcountry’s seasonal flavors focusing on farm to table cuisine. During his tenure at the Westin, he was a featured presenting Chef at the renowned Savannah Gourmet Seafood & Spirits Festival. Additionally, the Chef was a semi-finalist in the Southeastern division of the Masters of the Craft Culinary Challenge. Chef CJ is incredibly excited to return to Florida and join the Hotel Melby at the helm of the Landing Rooftop culinary team, and looks forward to sharing his extensive knowledge and culinary creativity with the local community and travelers alike, delivering a unique dining experience.
